I love meals that let a humble can of beans shine as the star ingredient.
For lunch today I warmed up a can of Charro beans from HEB and added a tiny sprinkle of cheese, avocado, cherry tomatoes, Chobani Greek yogurt, cilantro & lime. It took <10 minutes and was hearty & satisfying.
These guys really don’t deserve to always play a supporting role to a platter of fajitas, y’all.
